Diabetes Friendly Sausage Skillet & Veggies
Fresh herbs give this dish an amazing flavor!

This diabetes friendly sausage skillet is bursting with flavor from the fresh herbs, veggies, and a touch of veggie stock.
Be sure to get fully cooked sausage with as little sugar as possible and with the least amount of added ingredients and preservatives. Don’t want to use sausage? Feel free to sub in ground turkey or chicken.

Servings: 3-4
Ingredients
1 package of fully cooked sausage (sub ground turkey or chicken)
1T - 2T of olive or avocado oil
1/2 of red bell pepper and 1/2 of yellow pepper (or any other color you want)
1/2 of a large white onion
1 leek, sliced and soaked in water to remove dirt
2 - 3 small garlic cloves or 1 - 2 large cloves - chopped
1T fresh thyme
1T fresh flat leaf parsley (or curly - but curly has a slightly more bitter taste)
1/4c vegetable stock (no salt added)
Salt and pepper to taste
Directions
Get all of your ingredients chopped and ready to go
Add oil to the pan and get it hot, around 365°F/185°C then add white onion and caramelize
Add leeks and bell peppers and saute until tender
Add garlic and herbs, cook until garlic is fragrant, about 30 seconds
Add sausage and cook for 2 - 3 minutes, just until they get hot
Add vegetable stock and let simmer for about 5 minutes, stirring occasionally
Salt and pepper to taste
Serve with a side of your favorite veggies or a salad. Enjoy!

Tips
Remember, this is just cooking it’s not rocket science! Add, remove, or adjust the ingredients to your liking.
Mise en place! In other words have all ingredients ready before you start cooking so you’re not scrambling and possibly burn the food!
Try to get leeks with long white parts as they contain more flavor! Save the green leaves for vegetable stock, compost, or whatever else.
Be sure to put your leeks in cold water and gently wash after slicing. The dirt will sink to the bottom and the leeks will float to the top
If you’re using dried herbs use 1/2 the measurement of the fresh amount because dried herbs are more potent in flavor
Sautee the white onion first to caramelize them, leeks don’t take as long. Plus you’re not looking to caramelize the leeks, just get them tender.
Add a touch of salt to the onion when cooking, it will help draw the moisture out and speed up the caramelization process
Add garlic just before you add the liquid, you don’t want to burn the garlic, it becomes bitter. Cooking time for garlic should be just around 30 seconds or so or until they become fragrant.
Be sure when you buy stock or broth that you get the one with no salt added. You want to control the salt when cooking and if you add stock with salt your dish may end up too salty
